- 2 sticks of butter
- 2 c. uncooked Mahatma long grain rice, (NOT instant)
- 4 c. water
- 2 cans Hatch diced tomatoes with green chilies
- 1/4 c paprika (I use Tone’s Paprika)
- 1/4 c cumin (I use Tone’s)
In large pot, melt butter on medium heat. Once melted, add rice only and saute rice in butter for 5 minutes.
Add all other ingredients and bring to a rolling boil for 10 – 15 minutes or till it starts to thicken. Turn off heat and cover till all liquid is absorbed.
