- 1/2 butternut squash*, cut in large slices
- 1 zucchini, sliced
- 1/2 bag pre cut carrots, 8 oz
- 1/2 of each, green, orange, yellow bell pepper
- 1/2 red onion, sliced
- 3 large spoonfuls of butter
- My House Seasoning
Slice and layer veggies in casserole. Dollop butter on top, sprinkle house seasoning over top.
Bake covered with foil on 300 for about an hour or till veggies are tender.
*butternut squash tip, microwave for a few minutes before peeling and it will peel and slice much easier. They can be somewhat hard if not.
